Chemistry and funcionality of carbohydrates and derivatives (PREBIOIN)


The PREBIOIN group is made up of researchers with extensive experience in carbohydrates from a transversal perspective, within the food area. It is a consolidated group, made up of three researchers with multidisciplinary training in Food Technology, Agricultural Engineering and Pharmacy, which allows them to approach carbohydrate science from a more basic perspective to another of greater application at an industrial level. The main line of research is the PRODUCTION OF CARBOHYDRATES AND DERIVATIVES through sustainable strategies and processes for the integral use of agri-food waste and by-products, for use in the preparation of healthy foods. The PREBIOIN group is positioned in the VIDA Global Area and the subject matter addressed is within the Sustainable Development Goals, in line with the 2030 Agenda.
