Counts are performed by conventional methods based on ISO standards. Para foods with a water activity greater than 0,95 the ISO 21527-1:2008 and for those of less water activity the ISO 21527-2:2008.
Molds and yeasts can be considered ubiquitous, and therefore can be detected in practically any type of fresh food. They have little thermoresistance, but tolerate very low values of pH and Aw compared to bacteria. They require oxygen for their growth. Airborne spread is a problem in many industries, especially processed foods, where there is a low bacterial load.
