System Biology of Yeast of Biotechnological Interest


Industrial yeasts responsible for biotechnological processes are highly specialized organisms that have evolved under restrictive conditions in different environments manipulated by man, a subject on which the group works. In the last years, new lines are included: 1) Application of integrative multi-omic data and mathematical modeling into yeast predictive metabolic models (digital twins to develop processes more responsible and production of beverages (wines and beer) according to consumer preferences (aroma and low alcohol); 2) Molecular mechanisms through which yeasts accumulate bioactive molecules (serotonin, melatonin or hydroxytyrosol) or essential micronutrients (iron) for production of health-promoting ingredients or healthier food products; 3) Study of molecular mechanisms and yeast infections through multi-omic approaches, developing novel antimicrobial strategies and antimycotic resistance.
